I don't buy the "wheat is ALWAYS bad for ALL humans" thing, but my own
health has improved greatly since cutting out wheat and other glutenous
grains. Digestive problems, skin problems...all greatly reduced, and
they all come back if I eat wheat (I can get away with moderate amounts
of oats or rye.)
It /is/ a pain in the ass sometimes, but I've gotten used to it; most
gluten-free bread sucks, but
Bob's Red Mill makes a great mix that I can
dump into my bread machine with a few other ingredients, and I have few
complaints on that front.
The only times it's really annoying are when I'm in a catered meeting
(it's always pizza or sandwiches or doughnuts), on an airplane, or
similarly constrained from going out and getting my own food. But that
just requires some thinking ahead.
My chiropractor/applied kinesthesiologist thinks we can get rid of
the allergy; a previous doctor, who discovered the allergy by doing some
blood tests, thought so too. We'll see.
In the meantime, cutting out gluten has somehow magically erased my
lactose intolerance, and I think that's a fair trade.
